Strawberry Yogurt Waffle Cake

Enjoy a strawberry yogurt waffle cake, a sweet temptation that delights with fresh strawberries and creamy filling.

Ingredients (5-6 waffles)

30 minutes preparation time, 1 hour cooling time, very simple

For the waffles:

200g spelt flour
80g butter
80g sour cream
30g sugar
2 eggs
Zest of half an organic lemon
100ml mineral water (seltzer water)

For the cream:

250g mascarpone
200g natural yogurt 3.6%
2 pkgs vanilla sugar
400g strawberries
4 tbsp strawberry jam
Powdered sugar
2 sprigs of fresh mint

Preparation

For the waffles, mix all ingredients together and bake in batches in a preheated waffle iron.

Meanwhile, smooth out the mascarpone, yogurt, and vanilla sugar, then set it aside.

Set a handful of strawberries aside for decoration, dice the rest, and fold into the yogurt cream.

Spread one side of each waffle with strawberry jam, apply a layer of strawberry yogurt cream, and cover with another waffle. Repeat this layering until all waffles have been used. Finish by topping with the reserved strawberries and refrigerate for an hour.

Just before serving, garnish with a sprinkle of powdered sugar and fresh mint.
