Work Safely
The newly developed Z-shaped holder, on which the sharpening segments are attached in two proven grit sizes, allows both left- and right-handed people to sharpen their knives on both sides directly on the knife block without moving the entire block. The perfect sharpening angle of 15 degrees for European knives is correctly preset when you draw the knife across the segment at a right angle to the base surface.
The application
For the best possible sharpening result, moisten the sharpening segments under running water. To get a perfectly sharpened knife, place it horizontally at the tip of the sharpening stone and draw it several times in a gentle arc from top to bottom, as needed. Make sure to go through the entire blade, from the shaft to the tip, evenly.
To sharpen the other side of the blade, remove the Z-bar from the jig, turn it 180° and fix it in the recess provided at the lower end. Then repeat the described application on this side of the blade.
Finally, carefully wipe the knife clean with a damp cloth to remove any residue from the blade.
Double Sharp
Like all TYROLIT LIFE sharpening systems, the Knife Block Plus also has two hand-crafted ceramic precision segments in the proven grit sizes of 400 and 800 (according to FEPA). For coarse sharpening, first use the coarse, darker side marked ‘Sharp’. For fine sharpening and to give the knives a lasting sharpness, repeat the process with the lighter side of the sharpening stone marked ‘Finish’.
Maintenance of the sharpening system
To ensure that you enjoy your sharpener for a long time, we recommend using a non-woven abrasive. This can be used to roughen the stones again, making them effective for a lifetime of use.
